Easy Carrot Cake Recipe for Your Easter Feast

As Easter approaches, it's time to elevate your dinner table with a dessert that's not only a classic but also irresistibly delicious – Carrot Cake! This easy-to-follow recipe is a perfect blend of moist, spiced goodness and creamy decadence, making it the ideal sweet treat to round off your Easter dinner.

A super easy version for a moist and delicate treat 😋

Some carrot cake recipes are overly complicated with multiple steps, more ingredients that you would like necessary and super time consuming! When we already have dinner to make and a house to prepare, sometime easy is a nice change 🙂 

This carrot cake, although remarkably quick and easy will not disappoint! 

Carrot Cake Recipe

Ingredients

Mix

  • 1 cup sugar
  • 1 cup vegetable oil

Add in...

  • 3 eggs – beat 1 @ a time

Measure in and mix

  • 1/2 tsp vanilla
  • 1 1/3 cup flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon

Lastly

  • ~ 2 cups of grated carrots
  • chopped walnuts optional

Directions

Filling

Preheat oven to 350 degrees F.

Pour cake mix into a rectangle pan

Cook for 40-45 minutes or until tester comes out clean. 

Let completely cool .

Basic Cream Cheese Frosting

Ingredients

  • 8 ounces cream cheese
  • ½ cup butter, softened
  • 2 teaspoons vanilla extract
  • 2 cups confectioners’ sugar

Directions

Beat softened butter, cream cheese, and vanilla together in a large bowl with an electric mixer until creamy and light.
Add confectioners’ sugar a little at a time until smooth

Assembly

Plate the carrot cake on a festive platter

Cover cake with cream cheese frosting. Add chopped walnuts in a pretty pattern on top of the cake.
