Simple is best! And your guests will not only get it, but will appreciate the time spent with you versus the time you spend running in and out of the kitchen getting everything done. I like to do a make-ahead dish that lets me free up my time for engaging rather than entertaining. Maybe a slow-cooked stew, a baked pasta, or a charcuterie-style grazing board.
