Strawberry Spotlight 🍓
There’s something about strawberries that just scream summer, isn’t there? Maybe it’s their ruby-red glow, their sweet, sun-kissed flavour, or the way they make even the simplest recipe feel a little extra special. Around here, when strawberry season hits, I find any excuse to sneak them into just about everything — from refreshing drinks to crisp summer salads.
Today, I’m sharing two great recipes that are sure to make your summer table shine. First up, a Strawberry Basil Lemonade — it’s bright, a little fancy, and guaranteed to impress your guests (even the ones who “just popped by”). It’s like sunshine in a glass, with that sweet berry flavour, zesty lemon, and a hint of fresh basil that takes it to a whole new level.
And because no summer meal is complete without something light, healthy, and delicious — we’re tossing together a Summer Strawberry Spinach Salad with Avocado. It’s fresh, colourful, and bursting with flavour — basically summer in salad form.
So grab those strawberries while they’re at their peak, and let’s get mixing, sipping, and munching! 🍓☀️
Strawberry Basil Lemonade
Summer in a glass😋
Ingredients
- 10 lemons, juiced, about 1 cup of fresh lemon juice
- ¾ cup super fine sugar
- 4 cups warm water
- 8-10 strawberries, tops removed
- ⅓ cup fresh basil
- ½ cup vodka optional
Directions

Add the sugar and the water and stir to combine and dissolve the sugar. Let cool entirely.

Add the strawberries and basil.
- Step 4
Using an immersion blender, blend the mixture for about 20 seconds just until the mixture turns pink and the basil is finely chopped. Strain out any of the basil bits if you don’t want them, they’ll have already infused into the drink.

Add alcohol if desired. Serve over crushed ice and enjoy!
Notes
Non-alcoholic version: add a splash of sparkling water and enjoy it over some ice.
Summer Strawberry Spinach Salad with Avocado
A Light, Fresh & Flavour-Packed Salad Perfect for Sunny Days ☀️
Ingredients
For the salad:
- 1 package (5 ounces) organic spinach
- 8 ounces strawberries, halved (about 2 cups halved strawberries)
- 1 large avocado, sliced
- ½ small red onion, thinly sliced
- ½ cup feta crumbles
- ⅓ cup raw sliced almonds
- ¼ cup chopped shelled roasted pistachios
For the balsamic strawberry vinaigrette:
- 3 tablespoon balsamic vinegar
- ¼ cup olive oil
- 1 garlic clove, grated or finely minced
- ½ teaspoon dijon mustard
- ½ tablespoon strawberry jam (or jam of choice)
- Freshly ground salt and pepper, to taste

Notes
Use Seasonal Berries and fruit! This recipe is great with other berries and fruit too. Try blueberries, peaches, raspberries or blackberries when strawberries not in season or to mix it up 🙂
